Tasting Note
Energetic orange-red fruit—raspberry, strawberry and blood orange—lifted by hibiscus, pomegranate, bay laurel and anise. Lush, silky entry with a focused mineral core, saline finish and lively, firm tannins promising long-term aging.
Food Pairing
Western: roasted duck, mushroom risotto, grilled salmon, herb-crusted lamb. Asian: Peking/roast duck, char siu, miso-marinated black cod, Korean BBQ short ribs, shiitake ramen.
Production Method
Estate biodynamic farming; hand-harvested, small-lot native-yeast fermentations. Mostly destemmed with estimated 10–20% whole-cluster; matured in French oak (c.31% new) for approximately 10–18 months.
