Tasting Note

Concentrated dark-cherry and dried-cranberry fruit with rose, anise, wild herbs and wet-stone. Dense, juicy palate with massive structure and chiseled, ageworthy tannins; savory and mineral-driven finish.

Roast duck, mushroom risotto, lamb chops, braised short ribs; Asian: Peking duck, char siu, Korean BBQ (bulgogi/galbi), mushroom-based hot pot, miso-glazed black cod.


Production Method

Biodynamic farming; hand-harvested, small-lot fermentations with careful barrel selection; aged in French oak (36% new).
