Tasting Note
Concentrated dark cherry and dried cranberry with underbrush, rose, anise and wet-stone minerality. Medium-full, structured palate with firm, chiseled tannins, bright acidity and a long, savory finish.

Food Pairing
Roast duck, mushroom risotto, pork belly, grilled salmon; Asian: Peking duck, miso-glazed black cod, Korean BBQ (bulgogi), shiitake and soy braised dishes.

Production Method
Estate biodynamic farming; low-yield fruit partially whole-cluster fermented (commonly ~19–30%); aged in French oak (roughly one-third new) before bottling.
