Tasting Note
Vibrant gold; aromas of lemon curd, peaches, brioche and toasted almonds. Silky, textured palate with bright acidity, honey and beeswax hints, saline minerality and a persistent finish.

Western: roast chicken, butter-poached lobster, creamy mushroom pasta, seared scallops, aged soft cheeses. Asian: miso-glazed black cod, tempura prawns, sushi/temaki (oily fish), teriyaki salmon, chicken katsu.
Production Method
Biodynamic farming; direct-pressed fruit fermented and aged in French and Eastern European oak (~25% new). Primary and malolactic fermentations in barrel; no inoculated yeast; minimal lees stirring; bottled early to preserve freshness.
