Tasting Note
Mineral-driven with green apple, Asian pear, stone fruit, lemon curd and sea-spray salinity. Silky, sappy texture, bright citrus acidity and a long chalky finish.
Food Pairing
Western: roast chicken, beurre blanc seafood, seared scallops, mushroom risotto, soft cheeses (Brie). Asian: sushi/ sashimi (fatty salmon/toro), tempura, miso-glazed cod, light Thai or Vietnamese dishes.
Production Method
Direct-pressed; fermented and aged in French and Eastern European/Austrian oak (≈25–30% new). No inoculated yeast; primary and malolactic fermentations in barrel; no lees stirring.
