Explosive crushed strawberries, rose petal, wet stone and fresh cherries. Incredibly perfumed; silky, juicy attack with seamless, present tannins and a long, persistent mineral-tinged finish.
Food Pairing
Western: roast duck, mushroom risotto, pork belly, grilled lamb, seared salmon. Asian: Peking duck, miso-glazed black cod, char siu, Korean BBQ, shiitake ramen.
Production Method
Biodynamic farming; hand-harvested, small-lot fermentations with judicious whole-cluster use; matured in French oak (≈37% new).
