Tasting Note
Heathered peat smoke with jasmine, crushed coriander, coconut and pink grapefruit; rich amaretto-poached peaches, caramelised lemon, dark chocolate orange — warming, complex and long-lived.

Food Pairing
Western: dark chocolate, Roquefort/blue cheese, roasted or grilled lamb, cured meats, smoked salmon. Asian: char siu or Cantonese roast pork, Korean BBQ, miso‑glazed dishes, spicy Szechuan beef, smoked-salmon sushi or aburi.

Production Method
Hand-selected casks (1990–1992) matured in a mix of sherry‑seasoned European and American oak hogsheads plus refill hogsheads/butt and a single ex‑bourbon barrel; small-cask marry and bottled at 45.4% ABV with natural colour.
