Tasting Note

Dark-plum and black-cherry core with cassis, mocha, cedar, bay-leaf and tobacco; floral rose/anise hints, silky yet firm tannins, bright acidity and a long savory finish.

Production Method

Hand-harvested, de-stemmed and whole-berry sorted; cold soak and native (wild) fermentation with daily pump-overs; ~21+ days on skins, basket-pressed and matured ~15 months in fine-grain Bordeaux/French barrels (≈25% new).
