Tasting Note

Concentrated blackcurrant, blueberry and plum with dark chocolate, espresso, vanilla, cedar and Asian spice. Mint and bay lift the aromatics; fine nutty tannins, balanced acidity and a long, elegant finish.


Food Pairing

Grilled ribeye, roast lamb, aged cheddar, beef short ribs; Asian: Korean BBQ, char siu, Peking duck, spicy Sichuan beef, miso-glazed aubergine.


Production Method

Hand-harvested, fermented in separate parcels, matured ~18 months in French oak (≈50% new), then blended and bottle-aged. Vineyard follows minimal-intervention/organic-biodynamic practices.
