Black cassis and ripe cherry with dark chocolate, cedar and vanilla; concentrated, full-bodied, rich and supple with creamy mid-palate, fine grainy tannins and a long, silky finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised beef short ribs, aged cheddar. Asian: char siu, Korean BBQ beef, hoisin-roasted duck, Sichuan pepper beef, miso-marinated steak.
Production Method
Hand-picked Cabernet and Shiraz fermented separately (Shiraz plunged, Cabernet pump‑over), 18+ days on skins; basket-pressed; matured ~15 months in French oak (about 50% new, mix of barriques and puncheons); finest barrels selected and blended prior to bottling.
