Tasting Note
Concentrated blackcurrant, plum and dark cherry with cocoa, cedar and violet; sweet spice and dark chocolate notes. Full-bodied, layered, with fine grainy tannins and a long, savory finish.

Food Pairing
Grilled ribeye, roast lamb, beef bourguignon, aged cheddar; Korean BBQ (bulgogi), char siu, Sichuan pepper beef, teriyaki-style beef.

Production Method
Cabernet and Shiraz fermented separately, blended before bottling; matured ~15 months in French oak (c.60–70% new); racked and returned during élevage. Estate fruit from Clarendon.
