Tasting Note
Profound blackberry, blueberry and ripe plum with dark chocolate, espresso, anise and violet notes. Full-bodied and plush with fine-grained tannins, balanced acidity and a long, spicy, cedar-tinged finish.

Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ beef, Chinese char siu, Malaysian beef rendang, spicy Szechuan-style dishes.

Production Method
Estate fruit hand-harvested; varieties fermented separately with gentle extraction and matured in fine French oak (partial new oak) before barrel selection, blending and bottling.

Hickinbotham Clarendon Vineyard (est. modern plantings 1971) is a family-owned McLaren Vale estate. The Peake is the flagship Cabernet–Shiraz, sourced from the oldest parcels and named for Clarendon founder Edward John Peake.
