Tasting Note
Rich, dark-fruited Shiraz with blackberry, blueberry and cassis, layered with clove, espresso and bittersweet chocolate, cedar and rosemary notes. Velvety yet muscular tannins and a long, licorice-tinged finish.
Food Pairing
Western: grilled lamb chops, roast beef, ribeye, beef stew. Asian: Korean BBQ, char siu, spicy Sichuan beef, beef rendang, chicken satay.
Production Method
Hand-harvested; gentle extraction (~20 days on skins). Aged ~15 months predominantly in French oak barriques (≈30% new), plus puncheons, foudres and concrete vessels. Estate uses organic/biodynamic viticulture.
