Tasting Note
Concentrated dark-fruited Shiraz: blueberry, blackberry and plum with black licorice, clove, dried herbs and menthol. Velvety, silky texture with fine-grained tannins and a long, spice-tinged finish.
Food Pairing
Western: grilled lamb chops, venison stew, braised beef short ribs, peppered steak. Asian: char siu or hoisin pork, Korean BBQ (galbi), Sichuan-style beef, teriyaki beef bowls.
Production Method
Hand-picked fruit; 50% crushed, 40% destemmed, 10% whole bunch. Cold soak 4 days; ~18 days on skins; basket-pressed. Aged in French oak foudre and puncheons (30% new) after 6 months on lees.

From Hickinbotham’s Clarendon Vineyard (established plantings 1971). Bottled under the Hickinbotham label since 2012; farmed with organic/biodynamic practices under viticulturist Michael Lane.
