Tasting Note
Citrus-driven with green-apple and stone-fruit, floral hints, light tropical notes, noticeable minerality, fresh acidity and a slightly creamy, persistent finish.

Food Pairing
Western: oysters, grilled/roasted white fish, scallops, roast chicken, light pasta with cream or lemon sauces. Asian: sushi/sashimi, tempura, mild Thai or Indian fish curries, stir-fried seafood.

Production Method
Whole-bunch destemming, gentle skin contact, soft pneumatic pressing, natural static clarification, fermentation at ~15°C in stainless steel; aged briefly in bottle.
