Tasting Note
Concentrated dark-fruited profile: blackberry, blueberry and plum with dark chocolate, liquorice and spice. Polished yet firm tannins, ripe acidity and a long, confit-fruit finish.
Food Pairing
Western: grilled ribeye, roast lamb, venison, aged Manchego or cheddar. Asian: Korean BBQ (bulgogi/galbi), char siu, Peking duck, spicy Sichuan beef, teriyaki beef skewers.
Production Method
Hand-harvested, destemmed grapes, cold maceration, fermentation in small stainless tanks, matured in French oak barriques (225L). Conventional viticulture.
