Tasting Note
Ripe black cherry and blackberry, violet and cocoa notes with black pepper and a touch of balsamic. Medium-full, rounded palate with savory herb and olive nuances, smooth tannins and a persistent, slightly spicy finish.
Food Pairing
Western: roast lamb, grilled ribeye, aged sheep cheeses, charcuterie and hearty stews. Asian: Peking duck, Korean BBQ (bulgogi), char siu, mildly spicy Sichuan beef, and richer teriyaki dishes.
Production Method
Hand-harvested, temperature-controlled fermentation (often co-fermented), matured in large oak vats and French oak barrels for ~9–14 months, bottled after light fining; native and selected yeasts used depending on cuvée.
Vineyard Info
Herdade do Rocim, estate between Vidigueira and Cuba (Baixo Alentejo). Founded/modernised after 2000 under owner José Ribeiro Vieira; enologist Catarina Vieira leads winemaking. ~120 ha estate with ~70 ha of vines.
