Tasting Note

Aromas of blackberry, cassis, violet, black pepper and cedar. Palate of dark plum, blackcurrant, spice and savory herbs, with bright acidity, fine-grained tannins and a long, savory finish.


Food Pairing

Roast lamb, grilled steak, braised short ribs, aged cheddar; Asian: Korean BBQ, char siu, Peking duck, Sichuan-spiced lamb, miso-glazed eggplant, teriyaki beef.


Production Method

Fermented and matured 18 months in oak hogsheads (c.20% new; 71% French, 29% American; 80% seasoned) before blending and bottling.
