Tasting Note
Full-bodied Shiraz with dark blackberry, black cherry and mulberry, layered with dark chocolate, licorice, lavender and peppery spice; minty/eucalyptus lift and fine chalky tannins leading to a long, savory finish.

Food Pairing
Grilled/roasted lamb, beef brisket, barbecued steak, mushroom risotto; Asian pairings: Korean BBQ, char siu, Sichuan-style beef, hoisin-glazed duck.

Production Method
Fermented on skins, matured in French oak (puncheons/hogsheads) for c.12–16 months; bottled under screwcap to preserve freshness.
