Tasting Note
Deep amber; rich candied fruit, dried apricot and fig, dark chocolate and toffee, warm peppery spice, vanilla oak and leather, with a long velvety finish.

Food Pairing
Western: dark chocolate, foie gras, blue or aged cheeses, roasted nuts, roasted/grilled lamb and game. Asian: Peking (roast) duck, char siu, braised pork belly, miso-glazed fish, spiced Szechuan dishes, rich dim-sum or Cantonese roasted meats.

Production Method
Assembled by the Master Blender from a blend of over 100 eaux-de-vie, matured in French oak barrels; youngest eaux-de-vie in the XO blend are at least 10 years old.
