Tasting Note
Deep, purplish-red; concentrated blackcurrant, plum, truffle, unsmoked tobacco and graphite with ripe dark berry compote. Thick yet lively, vibrant freshness balances power for a long, mineral finish.

Western: roast lamb, côte de boeuf, game birds, mushroom risotto, aged hard cheeses. Asian: Peking duck, Cantonese roasted pork (char siu), braised short ribs (Korean galbi), rich Sichuan beef dishes.

Production Method
Hand-harvested, destemmed, vat fermentation with temperature control; matured 18–20 months in oak (78% new barrels for 2009), frequent racking to refine clarity before bottling.
