Tasting Note

Dense, powerful Cabernet blend—blackberry, black cherry and cassis lift with graphite, espresso, leather and cedar; polished, silky yet firm tannins, bright acidity and a long mineral-tinged finish.


Food Pairing

Western: grilled ribeye, roast lamb, braised short ribs, aged hard cheeses (cheddar, manchego). Asian: Korean BBQ (galbi, bulgogi), Peking duck, Cantonese char siu, miso-glazed eggplant.


Production Method

Hand-harvested, small‑lot fermentations with gentle extraction; largely destemmed fruit aged ~24–30 months in French oak (high new-oak component); low-yield hillside vines, partial dry-farming.
