Tasting Note
Bright ruby; ripe red and dark cherries, raspberry coulis and wild strawberry with leaf-litter, subtle spice, mushroom/forest-floor notes and soft vanillin oak. Silky texture, vibrant mineral acidity and a long, spiced red-fruit finish.
Food Pairing
Seared venison with native pepperberry, roasted duck or duck à l'orange, wild mushroom risotto, roast pork or pork belly (char siu), miso-glazed salmon, Peking duck, teriyaki chicken.
Production Method
Site-selected Tasmanian and Yarra fruit; gentle handling, small-batch fermentations and restrained winemaking with maturation in French oak (subtle oak influence). Bottled under screwcap.
