Tasting Note
Lemon-curd and ripe white-peach fruit with a flinty mineral streak, subtle toasty French oak and a hint of struck-match. Juicy, rich mid-palate and zesty citrus drive leading to a long, saline finish.

Food Pairing
Western: Crayfish Thermidor, roast chicken, creamy pasta, grilled salmon, pork belly. Asian: miso‑glazed fish, sushi, Thai green curry, Cantonese steamed fish.

Production Method
Hand-harvested cool-climate parcels; whole-bunch pressed, wild-yeast fermentation in French oak (new and seasoned). Partial malolactic fermentation and ~9–10 months lees ageing in barrel.
