Tasting Note

Elegant junmai daiginjo with pear-like acidity, refined sweetness, floral top notes, light mineral/umami and a crisp, transparent finish.


Food Pairing

Sashimi, sushi, tempura, grilled white fish, oysters, lightly seasoned cheeses, roasted chicken, light pasta, salads; pairs well with both Japanese and Western seafood/white-meat dishes.


Production Method

Junmai Daiginjo (rice polished to 50%), brewed with in-house yeast, pasteurized (hi-ire) and bottled as a limited-edition release.


Vineyard Info

Niizawa Sake Brewery (新澤醸造店), founded 1873 in Osaki, Miyagi. Producer of the Hakurakusei brand, focused on food-friendly, carefully controlled sake production.
