Elegant Junmai Daiginjo with aromas of melon, banana and Shine Muscat; soft, gentle sweetness up front, bright citrusy acidity and a clean, crisp finish. Silky, food-friendly and refined.

Production Method

Junmai Daiginjo brewed from Yamada Nishiki (Tojo/Akitsu) polished to 29%. Slow, low-temperature fermentation using Mt. Zao water, careful pressing and cold storage; no added brewers alcohol.
