Tasting Note
Bright ruby red with wild berries, black cherry, herbs and subtle licorice. Silky, medium-bodied palate with polished tannins, balanced acidity and a gentle toffee/vanilla oak finish.

Roast lamb, grilled beef, cured meats, mushrooms risotto, aged cheeses; Asian: Korean BBQ, Peking duck, teriyaki beef, yakitori, spicy Sichuan dishes.
Production Method
Hand-harvested; spontaneous fermentation with indigenous yeasts in stainless steel and concrete; malolactic in tank and large barrels; aged 8–12 months in used French oak (225–500L) and concrete vats.
Vineyard Info
Family-owned Hacienda Solano (Cubillo family) works old, sustainably farmed vines in La Aguilera. Project started 2001, winemaking led by Toni Sarrión and Isabel Cano, focused on low-intervention, terroir-driven wines.
