Tasting Note
Ripe morello cherry and dark berry fruit with soft spice, smoky earth and saline minerality. Elegant, medium-bodied, delicate tannins, bright acidity and a long, persistent finish with floral lift.
Food Pairing
Western: roast duck, grilled salmon, pork belly, mushroom risotto, lamb chops. Asian: Peking duck, char siu, miso-glazed salmon, Korean barbecue, shiitake-soy stir-fries.
Production Method
5-day cold soak; 100% destemmed; fermented on skins for ~10 days; matured 10 months in French oak (20% new, 80% old); bottled August 2023.
