Tasting Note
Pale gold with honeyed citrus, green apple, pineapple and toasted hazelnut aromatics. Silky, creamy palate of lemon zest, peach and buttered toast, finishing with bright minerality and a long, saline finish.
Food Pairing
Roast chicken, halibut with lemon-butter, steamed mussels, twice-baked cheddar soufflé; Chinese steamed dumplings/dim sum, prawn dim sum, sushi and mild Asian seafood dishes.
Production Method
100% whole-bunch pressed; fermented in 228L barriques and 500L puncheons; ~10 months ageing in French oak (c.20% new) before bottling.
