Tasting Note
Delicate salmon-pink with bright red berries (strawberry, raspberry, redcurrant), red apple, citrus zest and floral notes. Creamy mousse, fine minerality, crisp acidity and a long, gently spicy finish.

Western: oysters, shellfish, smoked salmon, roast chicken, soft cheeses, berry desserts. Asian: sushi/sashimi, tempura, prawn dishes, Peking duck, mildly spicy Thai or Vietnamese dishes.
Production Method
Méthode traditionnelle: whole-bunch pressed, primary stainless fermentation (18–20°C), small addition of barrel-aged red wine before secondary fermentation; bottled June 2020 and aged a minimum 36 months on lees.
