Tasting Note
Delicate dusty-pink colour. Bright red berry fruit (strawberry, cherry, redcurrant) with citrus lift, brioche and toasted almond. Creamy, fine mousse, saline minerality and a long, focused finish with blood orange and crunchy acidity.

Western: smoked salmon, oysters, roast chicken, charcuterie, berry desserts. Asian: sushi/sashimi, tempura prawns, Peking duck, spicy Thai salads.
Production Method
Méthode traditionnelle (traditional method). Whole-bunch press, stainless-steel primary fermentation, 100% malolactic, blended with small reserve red, minimum ~30 months lees ageing, disgorged before release.

Gusbourne Estate (Andrew Weeber) converted historic Appledore estate to quality sparkling production from 2004; vineyards in Appledore (Kent) and near Goodwood (West Sussex). Known for Burgundian clones and IWSC awards.
