Tasting Note
Bright golden with fine mousse. Aromas of pear, mandarin and orange blossom. Palate shows citrus and orchard fruits—lemon, orange, pear—plus stone fruit, ginger, toasted bread and apple tarte tatin, with lively acidity and a long, mineral finish.
Food Pairing
Seared scallops, smoked salmon, lobster, fish and chips, soft cheeses; Asian: sushi/sashimi, tempura, dim sum, lightly spiced Thai or Vietnamese seafood dishes.
Production Method
Methode traditionnelle: whole-bunch pressed, settled 24h; primary fermentation 10 days (18–20°C) in stainless steel with a small percentage in old oak; 100% malolactic; secondary bottle fermentation with minimum 24 months lees ageing; disgorged and lightly dosed (8.9 g/L RS).
