Tasting Note
Bright lemon and lime with apple blossom, elderflower and cream. Palate shows peach, baked apple compote, ripe cherry and nougat; vibrant, rounded and elegant with a clean, persistent finish.

Seared scallops, smoked eel, fish and chips, roasted chicken, oysters; Asian: sushi and sashimi, tempura, dim sum, light spicy Thai or Vietnamese seafood dishes.

Production Method
Méthode traditionnelle: whole-bunch press, primary fermentation in stainless steel (small portion in old oak), bottle fermentation and lees ageing (min. 28 months).
