Tasting Note
Bright golden with a fine mousse. Nose of ripe stone fruits, honeyed citrus and toasted almond. Palate offers pear, red apple, white peach and raspberry with soft spice, toasted nuts and custard-tart richness; long, focused mineral finish.

Western: pan-seared scallops, lobster roll, oysters, grilled white fish, chicken risotto, Welsh rarebit, soft cheeses. Asian: sushi/sashimi, tempura, dim-sum, steamed fish, light Thai or Vietnamese fish dishes, lightly spiced Chinese seafood.
Production Method
Méthode traditionnelle: whole-bunch pressed; primary fermentation in stainless steel (small % in old oak); bottled for secondary (in-bottle) fermentation June 2021; minimum 25 months on lees before release.

Founded 2004 at Appledore, Kent. Estate vineyards across Kent and West Sussex; low-intervention viticulture. Head winemaker Mary Bridges (since 2023) with vineyard manager Jon Pollard. Producer focuses on vintage-only English sparkling wines.
