Tasting Note
Bright red-fruit core of raspberry and cherry with citrus lift, violet florals, pastry and toasted hazelnut from extended lees ageing; precise acidity and a creamy mousse leading to a long, mineral finish.

Fresh oysters, seafood (pan-fried turbot, roasted cod with mussels and chorizo), smoked salmon, soft creamy cheeses, mushroom tart/pithivier; Asian: sushi and sashimi, tempura, light Thai seafood, delicate dim sum.
Production Method
Méthode traditionnelle: whole-bunch pressed, settled 12–24h, fermented in stainless steel (small portion in old oak), bottle secondary fermentation and minimum 39 months on lees; disgorged June–July 2020.
