Tasting Note
Bright citrus, pink grapefruit and green apple with nectarine and lemon; toasty brioche, shortbread and hazelnut from extended lees; flinty saline minerality and a long lemon-ginger finish.

Food Pairing
Western: oysters, lobster, fish & chips, seabass ceviche, asparagus, goat cheese tart. Asian: sushi, tempura, shellfish dim sum, steamed crab, light Thai seafood.

Production Method
Traditional method (méthode traditionnelle): whole-bunch pressed, fermented mainly in stainless steel with a small percentage in old oak, bottling for secondary fermentation and extended lees ageing (~39–42 months).
