Tasting Note
Bright citrus, green apple and white stone fruit with brioche, toasted hazelnut and baked-apple richness. Creamy mousse, pronounced minerality and zesty acidity leading to a long, linear mineral finish.

Production Method
Whole-bunch pressed, settled 12–24h; fermented in stainless steel (small portion in old oak); secondary bottle fermentation (méthode traditionnelle); minimum 39 months on lees; disgorged June–July 2020.

Founded 2004 by Andrew Weeber; estate in Appledore, Kent with additional plantings in West Sussex. Charlie Holland is head winemaker; estate-grown Burgundian clones, low-yield viticulture and a focus on vintage English sparkling.
