Tasting Note
Super-ripe apricot, peach and tropical fruit with floral honey and lemon-citrus lift, pronounced slate/mineral core, bright racy acidity and concentrated sweetness leading to a very long, saline finish.

Western: foie gras, blue cheese (Roquefort), fruit tarts, lemon curd desserts. Asian: spicy Thai green curry, Szechuan dishes, Peking duck, sushi (fatty tuna), mango sticky rice.

Hand-harvested, selective picking of very ripe/botrytis-affected bunches; cool fermentation in stainless and neutral oak with extended lees contact; minimal additives; screw-cap closure.
