Tasting Note
Dark ruby with blackberry, black cherry, violet, smoked meat and spice aromas. Palate shows cassis, plum, pepper, vanilla and fine-grained tannins, vibrant acidity and a long savory finish with licorice and mineral notes.

Western: roast lamb, herb-crusted beef, duck confit, aged hard cheeses. Asian: Peking duck, char siu (barbecued pork), Korean BBQ beef, spicy Szechuan beef, grilled lamb skewers.
Production Method
Hand-harvested and sorted; small percentage Viognier is co-fermented with Syrah. Temperature-controlled fermentation, followed by extended ageing (~36 months) in oak barrels (approx. 50% new).
