Tasting Note
Mineral-driven Chenin: pear, tangerine, citrus oil, toasted almond, smoke and light honey. Silky, medium‑full palate with vibrant acidity and saline, long finish; tight now but will open with age.

Western: grilled/roasted scallops, lobster, sole meunière, roasted chicken with cream, pork belly, aged goat or Comté. Asian: miso-glazed black cod, steamed fish with ginger/scallions, sushi/sashimi, mild Thai coconut curry.
Production Method
Hand-harvested, whole-cluster pressing, indigenous yeast fermentation; aged 18–24 months in French oak (≈50% new) on fine lees; minimal filtration and low SO2.
