Crisp, mineral-driven Chenin: lemon, green apple and ripe pear with almond and saline chalky notes, subtle spice and lanolin. Textural, tense acidity and a long, savory finish.
Food Pairing
Western: grilled prawns, lobster bisque, crab cakes, roast chicken with lemon butter, aged goat cheese. Asian: sushi/sashimi, steamed white fish with ginger-soy, Thai prawn curry, light Chinese stir-fry with citrus and herbs.
Production Method
Hand-harvested, whole-cluster pressing; native yeast fermentation; matured 11–12 months in stainless, foudre and older French oak barriques (minor new oak). Certified organic farming.
