Tasting Note
Pale yellow. Lemon and white-peach aromas with menthol and oyster-shell minerality. Round and fresh on the palate with white-fleshed fruit, aromatic herbs and a taut, mineral finish.
Food Pairing
Western: oysters, grilled prawns, roast chicken with lemon, creamy seafood pasta. Asian: sushi/sashimi, Thai steamed fish, Vietnamese spring rolls, light Chinese seafood stir-fries.
Production Method
Whole-bunch pneumatic pressing, light cold settling, fermentation in French oak barrels and nine months ageing on fine lees in old barrels with occasional bâtonnage; no malolactic reported.

Château Pichon Baron (Pauillac) second wine (created 2012). Sémillon from a massal selection of Château Suduiraut planted on Boua chalky terroir; estate owned by AXA Millésimes.
