Tasting Note
Ripe cassis, blackberry and sour cherry with medium body, bright acidity and a smoky, slightly savory finish. Fine-grained tannins provide structure and a balanced, juicy profile.

Western: roast lamb, beef stews, duck confit, aged cheeses. Asian: char siu or Cantonese roast pork, Peking duck, Korean BBQ beef, shiitake-mushroom stir-fries.

Production Method
Sustainably farmed (EMS/ISO), hand-harvested. Traditional skin maceration and fermentation of blended lots, rested in stainless steel/neutral oak before bottling.
