Tasting Note
Fresh pear, quince and green apple with wet-stone/mineral notes, white flowers and a fine lees creaminess; bright citrus and saline finish with subtle aniseed/spice notes.

Production Method
Hand-harvested, gently whole-bunch pressed; wild/ambient yeast ferment in neutral/seasoned French oak with barrel fermentation and extended lees ageing; partial spontaneous malolactic.
