Tasting Note
Concentrated dark berry and cassis with lavender, menthol, tobacco and Mediterranean herbs. Clear mineral/saline thread, fine chalky tannins, bright acidity and a long, spicy finish.

Food Pairing
Western: roast lamb, grilled ribeye or steak, wild boar ragu, braised beef, aged pecorino. Asian: Korean BBQ (bulgogi/galbi), Cantonese char siu, Sichuan braised beef, miso-glazed eggplant or grilled teriyaki beef.

Production Method
Hand-harvested grapes; fermentation in small open-top oak vats with manual punchdowns; long maceration; aged ~18 months in French barriques; organic viticulture.

Vineyard Info
Podere Grattamacco, founded early 1980s, 80ha estate (34ha vineyards) on white clays/flysch near the Tuscan coast. Pioneer of Bolgheri, farming organically with low yields and Sangiovese retained in the blend.
