Tasting Note
Concentrated black and red berry fruit, bramble, mint‑chocolate and violet notes; dark cocoa, licorice and sweet spice on a full-bodied, velvety palate with polished dusty tannins and a long, spicy finish.

Western: dark chocolate, blue cheeses (Stilton), berry pavlova, roasted duck, braised lamb, crème brûlée. Asian: Chinese red-braised pork (hong shao rou), Cantonese roasted meats, black sesame desserts, sticky rice pudding, mildly spiced Szechuan dishes.
Production Method
Fermented and fortified with grape spirit, matured 4–6 years in seasoned oak casks as a Late Bottled Vintage; bottled as a field blend and often unfiltered (decant before serving).
