Tasting Note
Bright wild cherry and raspberry with violet florals, savory herbs, volcanic ash and a stony mineral core. Medium–full body, chalky yet refined tannins, lively acidity and a long, savory finish with tobacco and dried-earth notes.

Production Method
Hand-harvested; indigenous-yeast fermentation in large oak 'tini' without temperature control; ~30 days maceration; natural malolactic fermentation; 18–24 months aging in large oak vats followed by bottle rest.

Produced by Alberto Graci in Passopisciaro on Etna’s NE slopes. Small, artisanal estate farming old alberello vines organically at 600–700m altitude, focused on volcanic terroir expression.
