Bright wild cherry and raspberry with violet florals, savory herbs, volcanic ash and a stony mineral core. Medium–full body, chalky yet refined tannins, lively acidity and a long, savory finish with tobacco and dried-earth notes.

Food Pairing

Western: roast pork, braised lamb, grilled steak, mushroom risotto, aged pecorino and other hard cheeses. Asian: Korean BBQ, Szechuan-style beef, teriyaki tuna, Thai red curry, sweet-and-sour pork.

Production Method

Hand-harvested; indigenous-yeast fermentation in large oak 'tini' without temperature control; ~30 days maceration; natural malolactic fermentation; 18–24 months aging in large oak vats followed by bottle rest.
