Tasting Note
Crushed redcurrant and black raspberry with dried roses, wild Mediterranean herbs, star anise and volcanic smoke. Silky texture, bright acidity, fine velvety tannins and a sapid, stony finish.

Western: roasted pork, braised lamb, mushroom risotto, aged pecorino, tomato-based pasta, grilled game. Asian: char siu or Cantonese roast pork, Korean BBQ (bulgogi), Sichuan-style beef, miso-glazed aubergine.
Production Method
Hand-harvested Nerello Mascalese fermented in vertical wooden 'tini' with skin contact (~10 days). Aged ~18 months in large wooden tino and concrete tanks; natural malolactic fermentation; minimal intervention.
Vineyard Info
Estate founded by Alberto Graci in Passopisciaro; ~30 ha on Etna's north slope with many old alberello (ungrafted) vines. Organic, low-yield viticulture focused on terroir expression.
