Tasting Note
Pale salmon with crisp acidity: notes of orange peel, red currant, white peach and nectarine, stony minerality and saline finish. Elegant, precise and dry with a lingering citrus-tinged finish.

Grilled shrimp, seafood crudo, ceviche, sushi/sashimi, grilled chicken, Niçoise salad, charcuterie, margherita pizza, Thai papaya salad, Vietnamese spring rolls, lightly spiced Korean dishes.

Production Method
Slow hydraulic pressing, fermentation in concrete with indigenous yeasts without skin maceration; aged on fine lees in concrete for ~8 months before bottling.

Produced by Alberto Graci on the NE slopes of Mount Etna (Passopisciaro) at ~600m. Volcanic sandy soils, high vine density; estate focuses on traditional Etna varieties and low-intervention viticulture.
