Food Pairing
Western: grilled bluefish with lemon & thyme, shellfish, oysters, linguine alle vongole, roasted chicken, medium-aged cheeses. Asian: sashimi/sushi, tempura, Chinese steamed fish with ginger & scallion, Korean haemul pajeon (seafood pancake), Vietnamese seafood hotpot.
Production Method
Hand-harvested Carricante from Contrada Muganazzi. Certified organic viticulture; fermented in stainless steel and large seasoned oak/tini, 12 months on fine lees, then bottled and aged before release.
